- Soak the beans overnight.
- Cook the beans in water over low heat for about 45 minutes.
- Meanwhile, sauté the chopped onion and crushed garlic in olive oil.
- Add the peeled, seeded, and chopped tomatoes, along with the tomato paste diluted in a quarter-cup of water.
- Season with salt, pepper, paprika, and bay leaves.
- Cover partially and let the sauce reduce over low heat for about 15 minutes.
