Here is the recipe for delicious Greek-style giant beans in a tasty tomato sauce. In winter, it makes a hearty, standalone dish; in spring, it pairs wonderfully with grilled lamb; and in summer, sprinkled with a little oregano, it serves as an excellent meze to accompany an ouzo aperitif.

    250 grams white beans (giants)
    300 grams peeled tomatoes (fresh or canned)
    1 tablespoon tomato paste
    1 onion (medium)
    2 cloves garlic
      salt
      pepper
    1⁄2 teaspoon paprika (optional)

    1. Soak the beans overnight.
    2. Cook the beans in water over low heat for about 45 minutes.
    3. Meanwhile, sauté the chopped onion and crushed garlic in olive oil.
    4. Add the peeled, seeded, and chopped tomatoes, along with the tomato paste diluted in a quarter-cup of water.
    5. Season with salt, pepper, paprika, and bay leaves.
    6. Cover partially and let the sauce reduce over low heat for about 15 minutes.
    7. Once the beans are cooked, drain them and add them to the tomato sauce.
    8. Simmer for another 10 to 15 minutes over low heat, checking the texture of the beans.

    When serving, offer your guests the option to drizzle a little olive oil over their portions.
