How does the transcription from Greek to Latin work?

There are several methods for transcribing Greek text into the Latin alphabet. Some follow a strict letter-by-letter conversion, others attempt a phonetic proximity with the corollary of a different transcription depending on the letter pronunciation of the language using the latin alphabet (a Greek χ will sometimes be rendered by aspirated h like in the English have, sometimes by ch and sometimes by kh; the diphthong γγ by gg, ng, gu, ngh, etc.), while others try to substitute the forms of the missing Greek characters on computer keyboards or fonts by what is closest on a Latin keyboard, for example a θ will be replaced by the number 8 and a χ by the letter x even if phonetically this has no connection.
